warm vegan vegetable salad
Easy vegan recipe, perfect to make with leftovers
This is a nice and simple midweek meal; it can be served as a main or as a side dish with your favourite protein. I had mine with a nice warm garlic roll, Its super easy and quick to make!!! (insert) Drool.
- Sweet potatoes
- Green and red peppers
- Your favourite herbs
Pre-soak the lentils in a bowl of boiling water.
Chop your veggies up, and steam them in a pot with a little bit of water, some salt pepper and green herbs (parsley, basil, thyme, whatever you like) You can add fresh of bottled herbs.
Once the veggies have softened, grill them in an oven roasting tray in the over for 25 minutes, until they become crunchy.
Mix the veggies and lentils in a salad bowl and serve hot. Add a little bit of lemon juice for some extra zest.
