Creamy Vegan Pea Soup
This is a delicious and vegan creamy pea soup. This soup is one pot, quick and easy to make. Perfect for cold winter nights.
1 kg of frozen peas
1 white onion
2 Cloves of garlic
500 ml vegetable stock
Salt & pepper
175g of vegan cream or plain Greek yoghurt
Oil for frying
Finely slice the onion and fry with olive oil for 5 minutes in a cast iron pot.
Add in finely chopped garlic.
Add in the frozen peas ans cook until they are defrosted.
Pour in the 500ml of stock and put the lid on the pot.
Cook on a high heat for 15 minutes.
Remove from heat and blend smooth. Add the yoghurt or cream.
