Like most days, and I get bored and wonder what I am going to make for lunch or dinner. I was in the mood for something hearty, but it was such a strange day (weather wise), so I wanted something cold too, and so the chakalaka pasta salad was born. Not that I am taking credit for this recipe, I am sure lots of fellow South Africans have made it before me, but I also have my own version which is pretty cool, because chakalaka is so versatile, you can make it your own.
Let´s get started.
1 tin of chakalaka (I like the spicy one)
pasta of your choice
mayonnaise or vegenaise
Salt pepper and paprika
Cook the pasta according to the packet instructions.
In a separate bowl, mix together mayonnaise, chakalaka and your spices.
Once your pasta is cooked, let it cool completely before mixing it in with the chakalaka mixture.
Once everything is combined, let it sit in the fridge for twenty minutes before serving.
