Traditional South African Corn Bread (Mieliebrood)

Who does not love a freshly baked little loaf of bread on a weekend?

This recipe is fantastic, you can swap out ingredients without compromising the taste of the bread.

Corn bread, or mieliebrood as we call it here in South Africa, is a delicious snack, side dish, or late night snack. You can eat it as is, add some butter or jam on top, or dip in in a stew if you´re feelin´ fancy.

Ingredients

  • 500g self raising flour
  • 1 teaspoon salt
  • 250ml milk
  • 2 eggs
  • 1 tin of sweetcorn

Alternative recipe

  • 250g of self raising flour
  • 250g of maize(corn) meal, or polenta
  • 1 teaspoon salt
  • 2 eggs
  • 180ml milk
  • Paprika
  • Fresh rosemary

Method

Whisk the eggs and milk together

Sift the dry ingredients and add the milk mixture to it

Mix well until all the ingredients are properly combined

Add in the tin of sweetcorn if you are using the first recipe

Spoon the mixture into a bread tin

Bake on 180°C for 45 minutes to 1 hour
