- 1 cup of Tastic risotto rice
- 1 packet of white onion soup powder
- 1 white onion
- 1 cup of brown mushrooms
- 3 cloves of garlic
- salt, pepper, fresh thyme
Dissolve the onion soup powder in 1L of cold water (do not use warm or hot water, the powder will not dissolve)
In a large frying pan, brown your finely chopped white onion, you can brown it in olive oil or margarine
Once the onion has begun to brown, add in the mushrooms and brown them as well
Add in the cup of risotto rice and toast the grains with the onions and mushrooms. It is important to brown the rice before adding the stock, this will bring out a nutty taste.
Add in 250ml of the soup
Cook on a medium heat and stir constantly
Add in another cup of soup, but only when the first cup has been absorbed by the rice
Repeat this process while continuing to stir until you have used all the soup.
The Risotto will have swollen up nicely and should have a sticky consistency when you stir it
Serve immediately with fresh thyme sprinkled on top
