Shakshuka

The other day, I was making a home made spicy tomato relish for my sister´s birthday (don´t even ask how I got roped into doing that) and I had a tin of leftover tomatoes. Rather than putting it in the fridge and forgetting about it until it grew a beard, I made some Shakshuka with my morning toast and it turned out fantastic!

This is a great one-pan recipe.

Ingredients:

  • 2 eggs
  • 1 tin of tomatoes (chopped, diced or whole)
  • 1 green pepper
  • 1 yellow pepper
  • 1 white onion
  • garlic
  • fresh chilli
  • paprika
  • salt and pepper
  • dash of cumin

Method:

Finely chop the peppers and onions

Heat up some oil in a frying pan

Fry the peppers and onion on a high heat until translucent

Add in the garlic, cumin, chilli and paprika

Season as you go

Add in the tinned tomatoes and fry for another 5 minutes

Make two wells in the pan for your eggs, gently break the eggs into the wells

Cover with a lid and cook until the eggs are done the way you like them

Serve hot with coriander leaves or parsley.

I recommend putting some on your toast
