1 white onion

½ cup lentils

½ cup white rice

Salt and pepper


Soak the lentils and rice in water so soften them before cooking

Finely dice your onion

In a pan, heat up some olive oil and caramelize your onion, this can take up to 45 minutes, season with salt as you go

When the onions are done, add 2 cups of water and bring to the boil

Once the water is boiling, reduce the heat to a simmer and cook for 2 minutes, season as needed, add the pepper

Add in the lentils and rice and bring the heat up again

Cook for 5 minutes and then reduce the heat to a simmer

Simmer until all the water is absorbed. This takes about 15 minutes

Serve with freshly chopped parsley.
