At first glance, this may sound like baby food, but trust me, it is delicious. This purée is such a great add-on to so many dishes. When I still ate meat, I would put this on top of my steak, now I put it in my baked potato, or I top my oven baked veggies with it, instead of making a heavy cream sauce. You can add milk or soy milk into it to make it creamier, and margarine is a great option too. I usually add a lot of cracked black pepper to mine, I love the taste of the peppercorns.
1 head of broccoli
100ml of milk or a milk alternative
Salt, black peppercorns
Cook the broccoli until soft.
Transfer to an upright container and blitz smooth with an immersion blender.
Add salt and pepper as you biltz, and add the milk in bit by bit until you have reached the desired consistency.
Serve on top of baked vegetables.
