Chickpea stir-fry

Pro tip: Let the stir fry vegetables defrost before you cook them, this will allow them to cook without becoming soggy.


1 tin of chickpeas

250g of frozen stir fry mix

1 cup of rice

1 stock cube

Salt, pepper and chilli powder


Cook the rice according to the packet instructions

In a large pan, heat up a little olive oil

Add in the stir fry veggies

Cook until the veggies are crunchy, add in the chickpeas

Season will salt, pepper and chilli flakes

Once the rice is cooked, add in into the pan with the veggies

Stir well until everything is combined
