four ingredient Mediterranean salad
This salad has become on of my favourite side dishes. I will be honest, I am sick of tired of watery, flavourless lettuce. I have decided to leave it out of my salads completely. This has made them some much more flavourful (although the feta might have something to do with that too)
This is a diverse salad that you can also add chickpeas to for more substance and extra protein. You can also add in finely sliced onions or spring onions or even rocket leaves if you feel like it.
Have fun and make it your own!
1 cup cherry tomatoes
1 wheel feta
½ cup black olives
Scrape the seeds out of the cucumber, slice into half moons
Slice the tomatoes in half, lengthwise
Cube the feta
Add all the ingredients into a bowl and drizzle with olive oil, salt and pepper
