Mushroom Broth with Noodles

I can´t seem to get enough of cooking with mushrooms, they just have that something special, I suppose that´s why they are referred to as having an umami taste. They really can add some much flavour and depth to a dish. This recipe is my poor man´s version of a broth with noodles. When I made this for the first time, I did not have any rice noodles in the house, so I used instant noodles. The dish was still great.


1 vegetable stock cube

1 cup of mushrooms

1 packet of instant noodles

1 onion

2 cloves of garlic

fresh chilli or chilli powder

Coriander for garnish


Heat up a little oil in a saucepan, and fry your onion until it becomes translucent. While the onion is frying, dissolve the stock cube in 500ml of boiling water

Add in the the mushrooms and let them brown. Add in the garlic, be sure not to add it in too quickly or it will burn and turn bitter

Add in 500ml of vegetable stock

Season to taste

Add in the instant noodles

Put a lid on the saucepan and cook for 15 minutes, or until the noodles are soft

Garnish with coriander leaves and serve hot
