I think potato salad is such a great dish,it is much-loved around the world, not just here in South Africa. Every country has its own variation too, which is great, because you can always learn something new by trying another region´s version, and who know, you might end up liking that one even more!
My recipe is pretty simple, and with veganaise being available widely in South African grocery stores, I have been able to convert this to a vegan recipe.
2 large potatoes
1 white onion
1 tablespoon of veganaise (I prefer the B-well Brand)
Salt and Pepper
Boil the potatoes until they are fork tender, alternatively, you can cook them in the microwave if you are in a hurry. Cook each potato for 2 minutes on the highest setting.
Let the potatoes cool. Once they are cooled down, peel them under running water. This helps get the skin off faster.
Transfer them to a medium sized bowl.
Finely dice the white onion and add to the potato.
Add salt and black pepper
Add in the veganaise and stir well. Be sure to stir carefully as the potato is soft and can break easily.
Transfer to a serving bowl and garnish with parsley.
