Couscous Salad

warm couscous and vegetable salad


For those days when you are not in the mood for cooking, this recipe is perfect for that. Sometimes you are not in the mood to cook, but those instant noodles just don´t hit the spot. This recipe is great for warming your belly, and is also nutritious.

Ingredients:

125ml of couscous

1 wheel of feta cheese

4 baby marrows

2 carrots

1 red onion

1 cup of frozen peas

Method:

For the Couscous:

Add the couscous to a bowl and add 1.5 cups of boiling water to it. Cover the bowl with a plate and let the couscous absorb the water

For the salad:

Heat some oil in a pan

Fry the onion for about 5 minutes

Add in the carrots and baby marrows

Cook for another 3 minutes (do not overcook or the vegetables will go soft)

Add in the frozen peas, cook with the lid on for 5 minutes

Season the vegetables to your taste

Add the couscous to the pan and stir well

Turn off the heat and add in the feta cheese

Serve immediately
