Hearty vegan sausage stew
This recipe is a life-saver in those cold winter months where you just want something hearty to warm your belly. This recipe is as rich and comforting as any meat stew you have ever had.
Winter months can be tough, even for me here in South Africa where the sun basically shines for 363 days a year, I still get the winter blah´s for dry air, dead grass and dusty air.
Seasonal changes can affect a lot of us. Food is my comfort. It works like nothing else. Sure, I do read books, get some fresh air, watch a feel-good movie and talk with friends. Although there really is no other feeling (to me) then a belly full of warm, hearty goodness.
I searched for inspiration on Pinterest (don´t we all?) and I cam across this recipe. I used this as an inspiration for my own home made recipe. Let me tell you, I was having a gloomy Saturday, and this just did the trick for me.

1 large potato
2 spring onions
1 white onion
1 cup mushrooms
2 garlic cloves
500ml vegetable stock
1 packet of brow onion soup powder
Prep all your vegetables, dice and chop everything to your preference
Heat up some oil in a pot
Fry the onions for 5 minutes
Add in stir well
Add in the other vegetables and salt
Sprinkle in the soup powder
Stir well and adjust the seasoning
Add in the vegetable stock and cover the pot
Cook for 15 minutes
Add in the sliced sausages and cook until the sausages are soft
Serve immediately with some delicious fresh bread.
