Vermicelli Stir-Fry

As per usual, here is another recipe for cold lazy nights where you don´t want to spend the entire evening in front of the stove. This is not technically a one-pot recipe, as you need to cook the noodles separately, but in the end it all goes in one pan, so that counts, right?

2 nests of vermicelli noodles

1 cup of mushrooms

1 cup of julienne carrots

2 spring onions

1 red onion

1 clove of garlic

15ml soy sauce

5ml vinegar

Salt, pepper, chilli


Cook the vermicelli according to packet instructions

In a large frying pan, fry the onion and spring onions in a bit of oil

Add I the garlic and stir continuously

Add in the mushrooms and carrots

Season with salt, pepper and chilli

When the vegetables are nice and crunchy, stir in the soy sauce and vinegar

Adjust to taste

Add in the noodles and stir fry everything for 2 minutes

Garnish with more spring onions if you like
