Vegetarian Broccoli and Cauliflower Soup

This is a great vegetarian broccoli and cauliflower soup for cold winter days. It is vegetarian but can be made vegan. This is a one pot recipe and it can be ready in less that one hour.

Here is South Africa, it is still winter, sigh. I feel like every recipe I write starts off by telling all of you that it is cold and miserable here. I suppose it makes for some good experiments and new, hearty recipes.

Today is broccoli and cauliflower soup day. Again, these two vegetables were on special at the grocery store, I think they were on their sell-by date. Not matter to me. I will use all the fresh vegetables I can get my hands on.

This recipe can be made vegan by either adding vegan cheese, or omitting the cheese completely.

Another new thing that I tried with this recipe, firstly, was a new flavour of vegan sausage by Fry´s Family, the second was to add the sausage to the soup.

Adding the sausage was just the delicious spicy add on that upped this soup to super tasty. Even my mom had seconds, and getting a food compliment out of her is like pulling teeth!

Pro sausage tip: fry the sausage in a separate pan with some margarine, salt, pepper and chilli oil. Once it is nice and crispy, top your soup with it.

P.S, this recipe goes great with some easy home made garlic rolls!

Vegetarian Broccoli and Cauliflower Soup

Easy one pot recipe, perfect for two people on a cold winter weekend.

  • 1 head broccoli
  • 1 head cauliflower
  • 1 carrot
  • 2 cloves garlic
  • 1 onion
  • 1 tsp italian herbs
  • 1 tsp salt
  • 1 tsp chilli powder
  • 100 g grated cheddar or gouda
  • 2 link vegan sausage


  • Firstly, start off by prepping all your ingredients
  • chop the onion, carrot and garlic
  • Roughly chop the cauliflower and broccoli
  • Bring a small amount of oil to medium heat in a large pot
  • Add in the onion and carrot and lightly fry them for 5 minutes
  • Once the onion has become translucent, add in the spices and the garlic
  • Next, add in the broccoli and cauliflower
  • Pour in 500ml of vegetable stock and reduce the heat to a simmer
  • While the soup is simmering, fry the vegan sausage in some margarine and spices
  • After 15 minutes, add in the grated cheese and stir well
  • Remove from the heat, spoon into a soup bowl and top with the fried sausage
