Vegetarian White Bean Chilli


When I think of Chilli, I think American cuisine, BBQ, Corn Bread and summer vibes. It doesn’t really evoke any memories of South Africa. I also don´t have any emotional connection to the dish.

The reason I tried to make it was of course because of Pinterest! Without Pinterest I would not be aware of half the amazing dishes the world has to offer, including chilli.

Now, I have never had a real made my an American, I have however, for made chilli for an American friend of mine and she said that it tastes nothing like the chilli she ate in North Carolina, but that it was still delicious – I will take it!

Back to my current recipe, I have made two variations, this one being my favourite. It is so simple to make, it takes me the about 15 minutes. I love the taste of the cannellini beans, but if you don´t, you can always try Faithful to Nature´s Butter Beans, they are also quite delicious.

Again, as with most dishes I experiment with, this dish has a lot of varieties. Many different ingredients can be added or omitted, depending on what you have in your fridge.

I used a recipe that I found in Pinterest and made my own version of it, which came out fantastic.

With this chilli, I also made some home made garlic rolls, which goes great with chilli (and anything else, really)

Vegetarian White Bean Chilli

Easy one pot recipe, perfect for spicy food lovers.

Ingredients
  

  • 1 tin cannellini beans
  • 1 white onion
  • 1 small leek
  • 1 cup fresh or frozen corn kernels
  • 1 rib celery
  • 3 cloves garlic
  • 1 tsp chilli oil
  • 1 pinch salt, pepper, paprika, cumin, coriander
  • 90 g Greek yoghurt

Instructions
 

  • Heat a little olive oil in a pot
  • Fry the onion, leek and celery for 5 minutes
  • Add in the garlic and corn and keep frying until the flavours have released
  • Sprinkle in the spices and spoon in the chilli oil to your taste
  • Next, add in the Greek yoghurt and reduce the temperature
  • Stir well and put the lid on the pot and let everything simmer for 20 minutes
  • Serve hot with fresh bread
  • (optional : add in a cup of stock for more flavour)
