Vegan Sweet Potato Curry
This sweet potato curry is perfect for winter. Made with simple ingredients found in your cupboard. It is vegan and one pot.
It is curry time again. I feel like I can change this blog from a home cooking blog to a curry blog. I never tire of curry, there are so many variations of curry, and no two curries taste alike.
Since I moved to Germany I have been craving curry more and more. At home I used to have it once a week, my mom is also a big curry lover. It is also one of my ,,lazy´´ dishes. I have been exposed to so many new dishes here, that I guess I have not had the opportunity to make curry that often any more.
I am sure that will change once I have settled in, for now I feel like I am still in the ,,discovering new things´´ phase.
Below is my first sweet potato curry recipe. It is sweet and delicious for all you sweet potato lovers out there. In South Africa, sweet potatoes are available year round and they are dirt cheap.
This is the first time that I have found orange sweet potatoes in the grocery store. I decided to make the curry with these ones. They just look so much brighter and tastier, as opposed to the normal pale white/yellow ones we usually get. Don´t get me wrong, the usual ones are still so delicious, they just look like they need a tan.
The reason I love this curry so much is because the flavours are quite simple, similar to a Thai curry, but it is unbelievably flavourful.
It does not take too long to make, compared with a South Indian curry where you have to build and layer flavours. This curry is more easy going, but no less flavourful.
One small recommendation I have to to not use too many sweet potatoes. The first time I made this curry, I used so many sweet potatoes it may as well have been a sweet potato stew sprinkled with curry powder.
One large sweet potato diced into small cubes is enough for this dish, you want the sweet potatoes to compliment the spices, not overwhelm it.
I also recommend using red onions instead of white or yellow onions, they have a bit of a sharper taste in my opinion, and they will not get lost in competing with the sweetness of the sweet potatoes.
Sweet Potato Curry
- 1 large sweet potato
- 2 red onions
- 3 cloves garlic
- 1 tsp masala
- 1 tsp chilli powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tin coconut milk
- 1 pinch salt
- Dice the sweet potato into small cubes. Do not peel it as you will lose some flavour and crunchiness.
- Slice the red onions into half moon slices.
- Crush the garlic and finely mince it.
- Heat some oil in a large frying pan.
- Fry the onions for five minutes until they become translucent.
- Add the spices one by one.
- Add in the sweet potatoes and garlic.
- Allow the sweet potatoes to soften a bit, but not become mushy.
- Lower the heat and add in the coconut milk.
- Simmer for 15 minutes.
- Serve hot with rice.
This dish is best served with some jasmine rice.
