No Crust Tuna Quiche
A vegetarian no crust tuna quiche. Can be a great side dish, or a main meal served with a fresh home made salad. Ready in 45 minutes.
I have come to love quiche so much, I think because a lot of the ingredients used in the ones I make are from my garden, and that makes it extra special to me. I don’t use a crust for this quiche, and it is one of the reasons it is so easy to make. There are so many different varieties that you can make, this is one of my favourites, if not my favourite.
(I apologise for the terrible picture, but it did taste really good)
1 wheel feta cheese
1 tin of tuna
1 bunch of fresh spinach
salt, pepper and paprika to taste
Preheat your oven to 150° (Gas 7) .
Heat a little bit of oil in a frying pan. Finely chop the onion and lightly fry it.
Once they are translucent, add in the tin of tuna (make sure to drain the water or oil first)
While the tuna is warming, chop your spinach.
Once the tuna is heated throughout, add in the spinach and cook until wilted.
While the spinach is wilting, mix the two eggs and milk in a separate bowl (I do it on the dish I am going to bake in to save dishes) and add some salt and pepper into the mix. Add in some chilli flakes if you are feeling adventurous.
Once the spinach is done, add the entire mixture to the baking dish and top with crumbled feta.
Bake in the oven for 30 minutes.
Best served with a salad and some good company.
