vegan banana bread
This vegan Banana Bread recipe is quick and easy to bake. The best part of this recipe – no added sugar! Ready in under an hour.
Soooo I bought 1.5 kg of bananas on special at Pick and Pay and they literally went mushy in two days. Fook. But not all is lost, banana bread for the win.
I struggled to find a nice method of making banana bread without adding sugar. Another reason I don’t like to bake, too much sugar. We all know that refined sugar is the devil. So experimented with some different ingredients, and found a winner. This recipe is idiot proof. You don’t even need to use exact measurements for this recipe to come out awesome., take that science!
Also note that because this recipe does not use flour or yeast, it will not rise as high as a traditional banana bread, but trust me, it is soo sooo yummy.
Let’s get started
- 4 Bananas
- 2 cups of jungle oats (uncooked)
- A pinch of salt
- 1 teaspoon of baking powder
- 1 egg (substitute the egg with silken tofu for a vegan recipe)
Mix all the ingredients together
Spoon mixture into 2 individual oven sized baking dishes (also known as lasagne dishes)
Bake in the oven on 180° for 45 minutes
