Vegetarian White Bean Chilli

Easy one pot recipe, perfect for spicy food lovers.

  • 1 tin cannellini beans
  • 1 white onion
  • 1 small leek
  • 1 cup fresh or frozen corn kernels
  • 1 rib celery
  • 3 cloves garlic
  • 1 tsp chilli oil
  • 1 pinch salt, pepper, paprika, cumin, coriander
  • 90 g Greek yoghurt


  • Heat a little olive oil in a pot
  • Fry the onion, leek and celery for 5 minutes
  • Add in the garlic and corn and keep frying until the flavours have released
  • Sprinkle in the spices and spoon in the chilli oil to your taste
  • Next, add in the Greek yoghurt and reduce the temperature
  • Stir well and put the lid on the pot and let everything simmer for 20 minutes
  • Serve hot with fresh bread
  • (optional : add in a cup of stock for more flavour)
