Vegan Power Bowl

This vegan power bowl is the perfect go-to lunch or dinner meal. It is quick and easy to make and really flavourful. It will defintely leave you sated andsatisfied.

  • 1 potato
  • 1 red or orange pepper
  • 1/2 cup frozen peas
  • 1 white onion
  • 2 cloves garlic
  • 2 baby marrows (or one large zucchini)
  • 1 sweet potato
  • salt and pepper to taste


  • Boil the potatoes until fork tender.
  • While the potatoes are boiling, preheat your oven to 180 degrees and start chopping and dicing your veggies.
  • Roast your veggies in the oven for 20 minutes, or until they are nice and crispy.
  • Once the potatoes are cooked, add in the garlic cloves.
  • Blitz the potatoes until they are completely pureed.
  • Serve the vegetables in a bowl topped with the potato puree.
